½ tsp salt, pepper & garlic powder.
¼ tsp cumin, smoked paprika & coriander.
1 tbsp plane flour.
1 diced mango – small chunks.
2 tomatoes – diced
1 spring onion
1 tbsp sweet corn
¼ chilli flakes – adjust to taste
Finely chopped garlic clove
1 tbsp coriander
Juice & zest of 1 small lime
Slice your fish into stripes – dip into seasoning mix & cover well.
Fry over medium heat until cooked
Load them up in your tacos & drizzle with salsa
Serve with a side salad or rice.
